What? You don't believe my sugo is magical? You're gonna have to try it then!
2 cans Italian tomatoes (6 cups) pureed in a blender.
1 1/2 cups chicken stock
1/2 large sweet vidalia onion
2 bay leaves
6 tablespoons olive oil
Heat a large sauce pan and add olive oil just before adding the diced onion and bay leaves. Turn the heat down to allow the onions to sweat. Add chicken stock and simmer 5 minutes. Pour tomato puree and stir well. Boil on medium heat with the lid on for 30 minutes. Remember to stay nearby and stir every 10 minutes. If it is boiling too rapidly with the lid on turn the heat down to medium low, or low depending on your stove.
Remove the lid and bring the heat up to allow a good steady simmer and allow to cook for an additional 45 minutes or until it has reduced and thickened to the desired consistency.
Cook a good quality made from semolina flour maccheroni/pasta (1 1/12 lbs) whatever shape you prefer. When al dente, add to the sauce, stir well and let stand 5 minutes with the lid on before serving with a generous sprinkling of grated Parmiggiano Reggiano cheese.
The stock and bay leaves allow for a really smooth depth of flavour.
Remove bay leaves when the sauce is done and stir in a couple leaves of fresh basil.
